Upside Down Banana Tart

Ingredients
- Unsalted butter250 g
- Brown sugar250 ml
- Cinnamon sticks2
- Star anise4
- Bananas, sliced±6
- Puff pastry (shortcrust is better)1 roll
Method
- Melt the butter in a large, heavy-bottomed pan.
- Stir in the sugar until dissolved.
- Add the cinnamon and star anise; simmer for 5 minutes, stirring continuously.
- Remove from the heat.
- Arrange the bananas in the sauce.
- Cut the pastry to size and place on top, tucking the edges in.
- Place the lid on and return to moderate heat for about 25 minutes. (If cooking on coals, add a few to the lid.)
- Once cool, flip over onto a serving board.

Can be done on a fire.
