Upside Down Banana Tart

Method

  1. Melt the butter in a large, heavy-bottomed pan.
  2. Stir in the sugar until dissolved.
  3. Add the cinnamon and star anise; simmer for 5 minutes, stirring continuously.
  4. Remove from the heat.
  5. Arrange the bananas in the sauce.
  6. Cut the pastry to size and place on top, tucking the edges in.
  7. Place the lid on and return to moderate heat for about 25 minutes. (If cooking on coals, add a few to the lid.)
  8. Once cool, flip over onto a serving board.

Notes

Can be done on a fire.
