Tuna Tartlets

Method

  1. Soak the bread in the cream and mix with the eggs.
  2. Add the tuna, onion, pepper, parsley, cheese and spices.
  3. Spoon into tartlet tins and bake until set and golden.

Notes

This is the "Perfect Batch" version (June 2025); yields 30–35 tartlets. The earlier draft used: 1 large tin tuna (800 g / 560 g drained), 5 slices bread, 5 eggs, 1 cup milk or cream, 2 large onions, 1 large red/green pepper, 500 g strong cheese and 6 anchovy fillets.
