Tuna Tartlets

Ingredients
- Tuna2 tins
- Slices of bread, crusts removed3
- Eggs6
- Cream250 ml
- Diced onion100 g
- Red or green pepper, diced1
- Fresh parsley, chopped115 g
- Strong grated cheese500 g
- Spicesto taste
Method
- Soak the bread in the cream and mix with the eggs.
- Add the tuna, onion, pepper, parsley, cheese and spices.
- Spoon into tartlet tins and bake until set and golden.
Notes
This is the "Perfect Batch" version (June 2025); yields 30–35 tartlets. The earlier draft used: 1 large tin tuna (800 g / 560 g drained), 5 slices bread, 5 eggs, 1 cup milk or cream, 2 large onions, 1 large red/green pepper, 500 g strong cheese and 6 anchovy fillets.
