Sweet Potatoes in Orange Sauce

Ingredients
- Orange juice600 ml
- Apricot jam250 g
- Stem ginger, blended350 g
- Lemon juice45 ml
- Zest of lemons3
- Cinnamon sticks5
- Star anise3
- Cornflour (to thicken, if needed)40 g
- Roasted sweet potato wedges or ringsto serve
Method
- Combine the orange juice, apricot jam, blended stem ginger, lemon juice, zest, cinnamon sticks and star anise.
- Cook and reduce on low heat for 15 minutes.
- Thicken with the cornflour if needed.
- Pour over roasted sweet potato wedges or rings.
