Method

  1. Mix the spinach, ricotta, feta, lemon zest and seasoning (salt, pepper, Italian herbs, nutmeg).
  2. Brush sheets of phyllo pastry with melted butter and fill with the spinach mixture.
  3. Fold into pies and brush with more butter.
  4. Bake until golden.
