Roasted Tomato and Red Pepper Soup

Ingredients

Method

  1. Roast the peppers and tomatoes with the garlic, salt, pepper, paprika, smoked paprika, dried basil and a splash of balsamic.
  2. Add the Mutti tinned tomatoes.
  3. Blend, adding cream or crème fraîche.
  4. Add a spoon of Greek yoghurt when serving.

Notes

To dress up for serving: basil, parsley or chives; lemon zest or lemon oil; crumbled goat's cheese; swirled Greek yoghurt; toasted pine nuts or almonds; garlic croutons; finely chopped sundried tomatoes.
