Roasted Tomato and Red Pepper Soup

Ingredients
- Red peppers and tomatoesas needed
- Garlic, salt, pepper, paprika, smoked paprika, dried basilto season
- Balsamic vinegarsplash
- Mutti tinned tomatoes1 tin (400 g)
- Cream or crème fraîcheto taste
- Greek yoghurt, to serve1 spoon
Method
- Roast the peppers and tomatoes with the garlic, salt, pepper, paprika, smoked paprika, dried basil and a splash of balsamic.
- Add the Mutti tinned tomatoes.
- Blend, adding cream or crème fraîche.
- Add a spoon of Greek yoghurt when serving.
Notes
To dress up for serving: basil, parsley or chives; lemon zest or lemon oil; crumbled goat's cheese; swirled Greek yoghurt; toasted pine nuts or almonds; garlic croutons; finely chopped sundried tomatoes.
