Red Lentil Dahl

Ingredients
- Diced onions1 kg
- Crushed garlic45 ml
- Fresh ginger30 ml
- Chilli flakes10 ml
- Cumin seeds15 ml
- Spinach (gehak/chopped)750 g
- Red peppers, chopped2
- Coconut cream1 l
- Mustard seeds15 ml
- Turmeric45 ml
- Garam masala60 ml
- Red lentils1 kg
- Passata2.5 kg
- Juice and zest of lemon1
- Salt and pepperto taste
- Wateradjust as needed
Method
- Sauté the diced onions.
- Add the garlic, ginger, chilli flakes and the spices.
- Add the lentils, passata, red peppers and spinach.
- Add the coconut cream, and water as needed.
- Simmer until the lentils are cooked.
- Finish with the lemon juice and zest; season with salt and pepper.
