Ingredients
- Sunflower oil375 ml
- Onions, finely diced2
- Garlic cloves10
- Chillies3
- Lemon juice75 ml
- Red peppers2
- Apple cider vinegar30 ml
- Red wine vinegar30 ml
- Salt5 ml
- Citric acid (for shelf life)5 ml
- Smoked paprika30 ml
- Oregano30 ml
- Cayenne pepper15 ml
- Bay leaves2
- Tinned tomatoes800 g
- Tomato paste45 ml
- Worcester sauce60 ml
- Sugar125 ml
- Black pepperto taste
Method
- Heat the oil and fry the onions.
- Add the garlic, chilli and red pepper; cook.
- Add the spices.
- Add the tomato, vinegars, sugar and Worcester sauce.
- Simmer for about 45 minutes.
- Remove the bay leaves.
- Blend, taste and adjust.
- Bottle.
