Ingredients
- Red onions, chopped2
- Garlic clove1
- Chillies250 ml
- Red peppers, chopped2
- Ripe tomatoes3
- Olive oil60 ml
- Juice and zest of lemons3
- Red wine vinegar125 ml
- Sugar30 ml
- Salt5 ml
- Pepper5 ml
- Bay leaves2
- Oregano22.5 ml
- Smoked paprika15 ml
Method
- Blend all the ingredients in a food processor.
- Transfer to a saucepan and simmer for about 30 minutes.
- Check the seasoning and adjust if needed; simmer again.
