Orange Sauce / Glaze

Ingredients
- Orange juice750 ml
- Water60 ml
- Lemon juice125 ml
- White wine vinegar160 ml
- Soy sauce80 ml
- Zest of oranges4
- Light brown sugar500 ml
- Grated ginger10 ml
- Garlic cloves, crushed/grated2
- Spring onions, chopped2
- Rawit + lombok chillies, crushed2 + 2
- Cornstarch (to thicken)90 ml
Method
- Combine everything except the cornstarch and cook for 5–7 minutes.
- Add the cornstarch mixed with 4 T (60 ml) water.
- Cook until thick.
Notes
As a guide: 3 oranges = 1 cup juice; 3 lemons = ½ cup juice. Yields 5 bottles of 263 ml. Noted October 2021.
