Onion Marmalade

Ingredients
- Onions2.25 kg
- Oil, to softena little
- Sugar (brown is best)1 l
- Vinegar60 ml
- Apple cider vinegar125 ml
- Balsamic vinegar60 ml
- Honey or syrup60 ml
- Paprika15 ml
- Smoked paprika7.5 ml
Method
- Soften the onions with a little oil.
- Add the sugar, vinegars, honey and paprikas.
- Cook until thick and sticky.
Notes
Yields ±1.8 kg — makes 5½ jars of 250 ml (or 375 ml preserving jars). Noted October 2019.
