Mini Cheese and Onion Tartlets

Ingredients
- Shortcrust pastry1 sheet
- Onions2
- Olive oil or butter15 ml
- Eggs2
- Crème fraîche150 ml
- Grated mature cheddar or Gruyère100 g
- Salt, pepper, fresh thymeto taste
Method
- Preheat the oven to 180 °C.
- Sauté the diced onions; add salt, pepper and thyme.
- Roll out the pastry, cut into rounds to fit a mini muffin tin; press down and prick the base.
- In a bowl, whisk the eggs, crème fraîche and cheese.
- Spoon the onion into the tart shells.
- Pour the cheese liquid over.
- Bake at 180 °C for about 20–25 minutes.
Notes
Makes about 20 mini tartlets.
