Lemon Cake

Ingredients
- Eggs3
- Sugar250 ml
- Flour375 ml
- Baking powder7.5 ml
- Margarine45 ml
- Milk190 ml
- Syrup: water250 ml
- Syrup: sugar500 ml
- Syrup: margarine15 ml
- Syrup: lemon juice250 ml
- Syrup: lemon zest15 ml
Method
- Mix the eggs and sugar.
- Mix the flour and baking powder, and add to the egg mixture.
- Melt the margarine with the milk and add to the mixture.
- Bake at 180 °C for 25–30 minutes.
- For the syrup: heat the water, sugar and margarine until dissolved, then add the lemon juice and zest.
- Pour the syrup over the warm baked cake.
