Lemon Cake

Ingredients

• Eggs3
• Sugar250 ml
• Flour375 ml
• Baking powder7.5 ml
• Margarine45 ml
• Milk190 ml
• Syrup: water250 ml
• Syrup: sugar500 ml
• Syrup: margarine15 ml
• Syrup: lemon juice250 ml
• Syrup: lemon zest15 ml

Method

1. Mix the eggs and sugar.
2. Mix the flour and baking powder, and add to the egg mixture.
3. Melt the margarine with the milk and add to the mixture.
4. Bake at 180 °C for 25–30 minutes.
5. For the syrup: heat the water, sugar and margarine until dissolved, then add the lemon juice and zest.
6. Pour the syrup over the warm baked cake.
