Ingredients

Method

  1. Mix the flour, baking powder, salt and soft butter.
  2. Mix the milk and eggs.
  3. Add the milk mixture slowly to the dry ingredients.
  4. Roll out, cut and plait the koeksisters, then deep-fry until golden.
  5. For the syrup, boil the sugar, water, zests, cinnamon and ginger; chill well.
  6. Dip the hot koeksisters straight into the cold syrup.

Notes

Alternative big-batch syrup from the book: 7 kg sugar, 4 l rooibos tea, lemon zest, 5 cinnamon sticks, 4 ml citric acid (citroenzuur), 8 ml cream of tartar.
