Ingredients
- Dough: flour1.1 kg
- Dough: baking powder38 g
- Dough: salt10 ml
- Dough: soft butter100 g
- Dough: milk600 ml
- Dough: eggs2
- Syrup: sugar1.75 kg
- Syrup: water1 l
- Syrup: zest of lemons4
- Syrup: zest of orange1
- Syrup: cinnamon stick1
- Syrup: ginger4 cm
Method
- Mix the flour, baking powder, salt and soft butter.
- Mix the milk and eggs.
- Add the milk mixture slowly to the dry ingredients.
- Roll out, cut and plait the koeksisters, then deep-fry until golden.
- For the syrup, boil the sugar, water, zests, cinnamon and ginger; chill well.
- Dip the hot koeksisters straight into the cold syrup.
Notes
Alternative big-batch syrup from the book: 7 kg sugar, 4 l rooibos tea, lemon zest, 5 cinnamon sticks, 4 ml citric acid (citroenzuur), 8 ml cream of tartar.
