Ingredients

Method

  1. Preheat the oven to 180 °C. Line a baking tray.
  2. Cream the butter and sugar until fluffy.
  3. Add the egg and vanilla.
  4. Stir in the flour to make a soft dough.
  5. Roll into balls and dip the tops in coconut. Place on the tray.
  6. Press a thumb or spoon into the middle of each to make a well.
  7. Fill the well with jam.
  8. Bake for 12–15 minutes until golden.
  9. Cool and store.
