Jam Tarts

Ingredients
- Butter, softened250 ml
- Sugar125 ml
- Vanilla5 ml
- Apricot jam125 ml
- Egg1
- Flour625 ml
- Desiccated coconut125 ml
Method
- Preheat the oven to 180 °C. Line a baking tray.
- Cream the butter and sugar until fluffy.
- Add the egg and vanilla.
- Stir in the flour to make a soft dough.
- Roll into balls and dip the tops in coconut. Place on the tray.
- Press a thumb or spoon into the middle of each to make a well.
- Fill the well with jam.
- Bake for 12–15 minutes until golden.
- Cool and store.
