Fruit Cake

Ingredients
- Mixed fruit450 g
- Sugar250 ml
- Water250 ml
- Butter115 g
- Flour, sifted500 ml
- Bicarbonate of soda, sifted5 ml
- Mixed spice, sifted5 ml
- Beaten egg1
- Brandy60 ml
- Nuts, chopped125 ml
- Cherries125 ml
Method
- Place the mixed fruit, sugar, water and butter in a pot.
- Cook slowly for 15 minutes.
- Allow to cool.
- Add the sifted flour, bicarb and mixed spice.
- Add the beaten egg, brandy, chopped nuts and cherries.
- Pour into a lined tin and bake.
