Christmas Cake — Ouma Weston

Ingredients
- Mixed cake fruit750 ml
- Sugar250 ml
- Margarine or butter125 g
- Bicarbonate of soda5 ml
- Eggs, well beaten2
- Baking powder1 heaped t (±7 ml)
- Cold water375 ml
- Mixed spice5 ml
- Flour500 ml
Method
- Place the fruit, sugar, butter, bicarb and spice in the water and boil gently for 25 minutes, stirring well.
- Remove from the heat and cool.
- Add the sifted flour and mix.
- Add the baking powder.
- Add the eggs and mix well.
- Pour into a lined cake tin.
- Bake for 1½ hours at 160 °C.
