Carrot Cake

Ingredients
- Unsweetened apple sauce310 ml
- Sugar500 ml
- Eggs, room temperature3
- Flour500 ml
- Baking soda5 ml
- Baking powder7.5 ml
- Salt2.5 ml
- Cinnamon5 ml
- Grated carrots500 ml
- Shredded sweetened coconut250 ml
- Chopped nuts (optional)250 ml
- Vanilla5 ml
- Crushed pineapple, not drained250 ml
Method
- Heat the oven to 350 °F (175 °C).
- Combine the apple sauce, sugar and eggs.
- Combine the dry ingredients (flour, baking soda, baking powder, salt and cinnamon) and mix into the wet mixture.
- Stir in the carrots, coconut, nuts, vanilla and crushed pineapple.
- Bake for 35–40 minutes.
Notes
The chopped nuts are optional.
