Blueberry, Red Wine and Thyme Relish

Ingredients
- Blueberries2.2 kg
- Sugar (incl. brown)1.3 kg
- Sprigs of thyme12
- Balsamic vinegar50 ml
- Chilli flakes2 pinches
- Red wine (Shiraz/Merlot)750 ml
- Red onion, diced250 g
- Lemon juice100 ml
- Saltpinch
- Lemon zestto taste
- Cinnamonpinch
Method
- Soften the onions in the wine.
- Add the blueberries, thyme and lemon juice; simmer.
- Add the sugar and a pinch of cinnamon.
- Cook, then bottle.
