Banana Chutney for Kuier Kos

Ingredients
- Bananas, peeled and chopped±10
- Raisins200 g
- Medium chillies2
- Cayenne pepper5 ml
- Paprika15 ml
- Turmeric5 ml
- Curry powder10 ml
- Freshly grated ginger60 g
- Vinegar400 ml
- Dark brown sugar400 g
- Apple cider vinegar100 ml
Method
- Place the spices in a pot with some of the vinegar and cook for 2–3 minutes.
- Add the chopped banana and raisins with the remaining vinegar and the sugar.
- Bring to the boil.
- Simmer until done, about 40 minutes.
Notes
Fills 290 ml jars (De Werkbij). Tip from the book: mash half the fruit if you don't like it too chunky, and chop the other half.
