Apple Pie

Method

  1. For the pastry, first mix the flour, sugar, salt and cubed butter with your fingertips; if too dry, add 1 T (15 ml) ice water. Then add the egg.
  2. Roll into a ball, cover with cling wrap and place in the fridge for at least 15 minutes.
  3. For the filling, cook the apples, brown sugar, cinnamon, raisins, lemon juice, pinch of salt and butter for 5–8 minutes.
  4. Roll out the pastry, line the pie dish and blind bake for 10 minutes.
  5. Add the filling.
  6. Top with the crumble (sugar, cinnamon, butter and flour rubbed together) and bake until golden.
